Our Vermicelli glass noodles, made from sweet potatoes, are convenient to make in their own included cup -- just add hot water. They are low glycemic index and are compatible with Paleo and other moderated-carbohydrate diets, but mostly you won't believe how delicious they are.
Most ramen soups are made from wheat noodles or rice noodles, but we wanted noodles that would rehydrate without being cooked on a stove and are still 100% gluten- and grain-free. We also wanted to create something very new, yet very traditional.
Chicken Noodle Soup:
This recipe uses ingredients used to make traditional chicken soup broth: celery, carrots, parsley, garlic, onion, and free-range chicken. We added a bit of nutritional yeast to increase the savory "umami" flavor, plus some turmeric for anti-inflammatory qualities. This soup will remind you of Mom’s or Grandmom’s homemade chicken noodle soup. It tastes fantastic for everyone but is also 100% compatible with the elimination phase of an AIP diet.

We created these tasty sweet potato glass noodles based on a recipe for traditional Korean starch noodles called Japchae. These noodles were created to maintain quality and taste while being rehydrated using only hot water; no pots or pans are necessary!
