Our Vermicelli glass noodles, made from sweet potatoes, are convenient to make in their own included cup -- just add hot water. They are low glycemic index and compatible with Paleo and other moderated-carbohydrate diets, but mostly you won't believe how delicious they are.
Most ramen soups are made from wheat noodles or rice noodles, but we wanted noodles that would rehydrate without being cooked on a stove and are still 100% gluten- and grain-free. We also wanted to create something very new, yet very traditional.
Vegan Enchilada Soup:
The traditional enchilada soup uses chicken, lots of cheese and also garlic and onion. We created a version that is fully vegan, dairy free and also garlic and onion free (allium free) and tastes amazing! For some people garlic and onion is hard to digest and must be avoided on a LowFod Map diet.
We are using garbanzos to add protein as well as tons of veggies like tomatoes, spinach and pumpkin. Chipotle peppers, cumin and paprika.
