  • 1 tbsp olive oil
  • 1 Onion - chopped
  • 2 lb pumpkin - peeled, chopped
  • 32 fl. oz (4 cups) chicken stock
  • Sea salt
  • Black pepper (omit for AIP)
  • 4 fl. oz (1/2 cup) heavy cream or full fat coconut cream
  • Marjoram or Parsley- Fresh (optional as garnish)

Directions:

  1. 1. Heat the olive oil in a pot, add chopped up onions and sauté until the onions are soft.

  2. 2. Add the pumpkin, chicken stock, cover with a lid and boil for 20min or until the pumpkin is soft.

  3. 3. Puree everything in the pot using a hand held immersion blender or regular blender.

  4. 4. Add sea salt, black pepper, heavy cream or coconut cream to mixture.

  5. 5. Boil for another minute or two.

  6. 6. Serve with fresh marjoram or parsley. I sometimes add roasted pumpkin seeds on top!
